Oreo Cupcakes!

For the cupcakes:                                                                                                         

  • 12 Oreo biscuits
  • 125g unsalted butter
  • 125g caster sugar
  • 2 medium eggs
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • 100g plain flour
  • 25g cocoa powder
  • 11/2 teaspoons baking powder
  • 1 pinch salt

For the icing:

  • 100g Oreo biscuits
  • 150g unsalted butter
  • 300g icing sugar
  • 6 Oreo biscuits for the top



For the cupcakes:

  1. Preheat an oven to 200 C / 180 C fan / Gas 6.
  2. Line a 12 hole cupcake tray with cupcake cases and in the bottom of each case, place an Oreo biscuit.
  3. In a large mixing bowl, mix together the butter and sugar. A little at a time, whisk the eggs and milk in followed by the,vanilla extract.
  4. Sift the flour and cocoa into the wet mixture along with the baking powder and salt. Fold until all the mixture is combined.
  5. Spoon the mixture into the cupcake cases; the mixture should fill the cases to about 3/4 the way up.
  6. Bake in the preheated oven on the middle shelf for 15 to 18 minutes, until risen and a skewer inserted into the centre comes out clean.
  7. Remove from the oven and allow to cool completely before icing, about 90 minutes.

For the icing:

  1. Separate the Oreo’s taking out the filling with a knife, you will need approximately 100g of Oreo biscuit.
  2. Place the biscuits in a bag and bash with a rolling pin until you have fine crumbs (or you may use a food processor if you prefer).
  3. When you have your crushed Oreo’s, mix into the butter and icing sugar.
  4. Pipe or spread your icing onto each cupcake. Finish each cupcake with half an Oreo on the top .
